Vanilla Almond Ice Cream

INGREDIENTS :


-Milk 2 liter
-500 grams of sugar
-16 egg yolks
-5ml vanilla essence
-600ml cream
-10ml almond extract
-100g butter
-2 full cups of almonds /200g of almonds
-100g of brown sugar


METHOD :

  1. Bring the milk to boil in a saucepen.
  2. Mix the egg yolks and the sugar together in a seperated bowl.
  3. Add the boiled milk to the egg mixture in slowly stream and stir well. Next place this mixture back on the stove and stir over low heat with a wooden spatula.
  4. Once the mixture starts to coat the spatula, remove it from the heat and stir for another 2 minutes, then transfer it in a another bowl.
  5. In a seperate container, melt the butter , then add the brown sugar, cook it on medium heat until the sugar is melted.
  6. Add the almonds, cooks it until it's golden brown and let it cool. Mix it in the cream and stir well.
  7. Allow to cool then add the vanilla essence and the almond mix. Next use a fine strainer to sieve it.
  8. Add it all into an ice cream mixture machine and mix it until it's cool.
  9. Add the ice cream into the mixture in a steady stream as the machine running.Continue to run the machine until the ice cream is relatively firm.
  10. Store in freezer for a minimum of 12 hours before serving it.
